Properties: White crystal or crystalline powder a small piece. Slightly bitter taste. Odorless. Sublimation temperature of 168-170 oC. Melting at about 284 oC and decomposes. 10% aqueous solution of the pH value of 5.5-7.0. Chemical stability. In food preparation, processing, almost no loss when heated. Soluble in water (4.03G/100ml, 20 oC), slightly soluble in hot ethanol, soluble in dilute mineral acid and alkaline solution. Insoluble in cold alcohol and ether.
Uses: One of the essential amino acids, the minimum daily needs of about 0.7g. Can enhance a variety of foods such as wheat flour, wheat gluten, peanut flour, potatoes and other restrictions contained isoleucine as amino acids, appropriate to strengthen.
